During colonial times, Merchants and Drovers was just one of several taverns along the roadways linking towns and cities in New Jersey and the other original 13 states. These taverns were often stagecoach stops and also served as a social gathering place where local residents could grab a drink and a meal. Taverns such as the Merchants' and Drovers' were often the largest gathering place in the community, and hosted government meetings from time to time. On April 23, 1789 George Washington was enroute to New York to assume the office of President of the United States. He stopped here to receive the troops from Elizabethtown and Newark. The tavern was built in 1773 and was added to the National Register of Historic Places on November 21, 1978.
